Thai Sweet Chilli Sauce

Blit all these in a food processor

1 stalk lemon grass
3 kafir lime leaves
2 medium green chillies
A handful of coriander (cilantro)

Then put in a pan with the ingredients below and simmer for about 10 mins, or until the sauce turns syrupy

200ml water
200g granulated sugar
Juice of one lime
dash of Thai fish sauce

And Your done, either serve warm or leave to cool

It is a speciality herb but i'm sure you can redilly find it in your supermarkets spice section. We can in the UK anyway.
