This is a great summer supper served along with the egg drop soup (also light) I'll be posting in the soup section.

10 oz deli roast beef
2 tbs fresh lime juice
1 tbs soy sauce
1 tbs water
1 tsp grated fresh ginger
1 clove garlic, crushed
1/4 tsp crushed hot pepper flakes (or leave them out if you don't like the spice...it's just as good)
3 scallions, sliced
1 cucumber, peeled, seeded and sliced
1 red bell pepper, thinly sliced
About 4 cups iceberg lettuce or salad greens from the AG
1/4 c dry roasted peanuts, chopped

Slice deli beef in thin strips and place in a medium glass bowl. Add lime juice, soy sauce, water, ginger, garlic and hot pepper. Toss to mix. Add scallions, cucumber and red pepper. Toss again. Cover and refrigerate until serving time (best if it sits for several hours).

Arrange lettuce in a salad bowl. Pour beef, vegetables and any liquid in bowl over lettuce. Sprinkle peanuts over the top and toss well.
