Mmmm... one of my favorites  Grin Makes a great appetizer or side dish!

2 Limes
20 to 25 fresh or defrosted peeled shrimp
3/4 cup fresh chopped cilantro
2 tbsp olive oil

Fried:
In a large frying pan, coat the bottom of the pan with the olive oil in a thin layer. Squeeze the limes in to the pan. Heat on medium. When the pan starts to sizzle add in the shrimp and cilantro. Stir it up and fry! I prefer my shrimp a little overcooked, but I know others prefer them *just* cooked.

Grilled:
Mix the oil and cilantro in a medium bowl. Squeeze in the lime juice. Add in the shrimp and stir them in to the mixture so their all coated (I use my hands). Cover and place in the refrigerator for an hour. Once the flavors are absorbed, skewer shrimp on kabob sticks and grill until done!

I tried this on the grill last night. It's great and very easy to make. Thanks for sharing that PVtx! Shrimp is one of my favorites.

If you want to get more complicated you could make a Thai sweet chilli sauce with the shrimps. Superb Flavour. Can be served cold too as a dipping sauce which tastes even better.

Thai Sweet Chilli Sauce

Blit all these in a food processor

1 stalk lemon grass
3 kafir lime leaves
2 medium green chillies
A handful of coriander (cilantro)

Then put in a pan with the ingredients below and simmer for about 10 mins, or until the sauce turns syrupy

200ml water
200g granulated sugar
Juice of one lime
dash of Thai fish sauce

And Your done, either serve warm or leave to cool
