These are also good for a light lunch with some crackers. If you are brown-bagging make the filling in advance, pack separately from the lettuce and roll them at work before you eat them.

1 3 1/4 oz. chunk water packed tuna, drained well
1 tbs finely chopped onion
2 tbs finely chopped celery
1 tbs mayonnaise
1/2 tsp soy sauce
2-4 leaves Boston lettuce (or butterhead, or whatever from AG)
1 scallion

In a small bowl combine tuna, onion, celery, mayonnaise and soy sauce. Blend well with a fork. Quarter scallions lengthwise. Spread tuna mixture along one side of each lettuce leaf and place a piece of scallion on each. Roll the leaf over the tuna mixture.

Sounds like a great lunch.  I may try this with grilled chicken breast too.

I'm sure it would be just as good as with the tuna! I've done it with canned salmon before too. I guess you could really use any leftover meat you have but if it was steak I might go with a dijonnaise instead of the mayonnaise and worcestershire sauce substituted for the soy sauce.
