Japanese Restaurant Ginger Salad Dressing

OK, not anything in the AG, but per Gisette's request
:
1/2 c minced onion
1/2 c peanut oil
1/3 c rice vinegar
2 tbs water
2 tbs minced fresh ginger
2 tbs minced celery
2 tbs ketchup
4 tsp soy sauce
2 tsp sugar
2 tsp lemon juice
1/2 tsp minced garlic
1/2 tsp salt
Combine all ingredients in a blender and blend on high speed 30 seconds or until all ginger is pureed.

Definitely try it Sprout. If you have ever been to a Japanese steakhouse they serve a salad with the meal that has this dressing. I love ginger!

I made it tonight. Having my mother over for Mother's Day tomorrow, so did some do-ahead cooking tonight (set sate' to marinate and made the ginger dressing). It's

I was tempted to use tomato paste instead of the ketchup, but I'm glad I didn't. The ketchup is definitely a key flavor. It's also a little overpowering though, so making it again, I'd cut the 2 Tbsp down to maybe 4 tsp.
Oh. Indonesian sate' is something to make with Aerogarden herbs, too. My cilantro is in a pot, but... still.
I never would have grown it this year except I found I was so disappointed when my Aerogarden wouldn't grow it. (I haven't tried its replacement pod yet. They gave me a really vast array of choices, and I picked Thai basil. But I'm saving that for the fall.)
The salad dressing is going over fresh Aerogarden lettuces and Swiss chard, plus some outdoor chard and baby spinach.

Oh, I am so glad you enjoyed it! I'm glad you didn't substitute for the ketcup Gisette. I agree with you, I don't think tomato paste would work as well. I'd love to get that sate recipe. They replaced the cilantro with thyme in the newer AG's, but cilantro is readily available here.

Poor Gisette. Sit down and put your feet up. I just read about you cooking and caring for others all day. You deserve a break and I can wait for the sate recipe. I'm not allowed in the kitchen today anyway. Maybe later this week....
