Author Topic: Smoked salmon and mushroom cream sauce for pasta (serve 4)  (Read 271 times)

1 medium onion minced
2 tbsp oil
150 g smoked salmon (more or less depending on personal taste)
250 g (1/2 lb) of mushrooms - portobello by preference but regular mushroom works too
4-5 sprigs of dill, chopped
1 cup of cream or evaporated milk
ground pepper

1. Saute the onion in the oil for a few minutes until golden brown, add sliced mushrooms and saute another 2-3 minutes.
2. Add chopped smoked salmon and the chopped dill and cook until smoked salmon turn opaque.
3. Add either single cream or evaporated milk and simmer for 5 minutes on medium heat to finish the sauce. Add pepper to taste. 
4. Pour over cooked pasta (linguine, spaghetti, or fusilli) and enjoy.  Could be served with a side salad from your AG produce.

If you prefer to eat healthy, use whole grain pasta and evaporated milk rather than cream and white pasta.

I got it to a state that I can do the meal in 20-25 mins with this (not including salad time).

I could eat smoked salmon any way you give it to me. I have a smoked salmon wanton recipe in the appetizer section you should try. YUM!

My mouth is watering.  My 16 year old daughter wants to kow when I'm going to make it.  As soon as I can snag some smoked salmon!

A little bit of smoked salmon can go a long way...  I love both receipes since they are quick and easy.  The quiche takes longer but you don't really have to keep the oven company while the quiche is cooking  Grin
